Monascus yellow is a pigment obtained by drying, grinding, extraction and cultures of the monascus (purpures Monascus: Monascus Anka) with acids (hydrochloric acid) of ethyl alcohol. The thinner, the stabilizer or solvents may be colouring.
The value of the color (E 10%, 1 cm) of Monascus yellow should not be less than the specified value.
Monascus yellow is the yellowish brown liquid, piece, powdered or paste with a slight characteristic odor.
