It is a natural food color extracted from the peel of the grape by the concentration, filtration, refining and sterilization processes. Its main composition is anthocyanins. It is a purple-red liquid or powder that dissolves easily in water and alcohol solutions. Its hue will be affected by the different values of pH: Crimson red in acid and blue in solution alkaline.
