It is a natural food color extracted from the peel of the grape by the concentration, filtration, refining and sterilization processes. Its main composition is anthocyanins. It is a purple-red liquid or powder that dissolves easily in water and alcohol solutions. Its hue will be affected by the different values of pH: Crimson red in acid and blue in solution alkaline. It has good thermal and light holding. It is widely used in wine, cold drinks, alcoholic beverages, cakes, jam and so on.
