The Artichoke is usually eaten in pieces, but it can also be eaten in an original and fresh way, transforming it into caviar. Artichoke caviar from Kémia is therefore a purée made from artichoke hearts of the “Violet d'Hyères” variety, whose taste is recognized as one of the best. This classic of Mediterranean gastronomy with a raw artichoke taste is produced manually, in an artisanal way, without preservatives, colorings or artificial flavors. After having carefully selected the most beautiful artichoke hearts, they are cooked, drained, then mixed with extra virgin olive oil and seasoned with candied lemon, which gives it a slightly tangy taste.
This thick but creamy caviar goes well on toast as an appetizer or with a salad as a starter, but also goes perfectly with a pasta dish, a quiche, a sandwich filling or vegetables as a healthy dip.
