Copra is the dried coconut endosperm. It contains 62-65% oil and 6% water only. The oil obtained from copra is very rich in saturated fatty acids, which gives the property to be solid at room temperature. In French Polynesia, refined coconut oil mixed with Tahitian Tiare flower is used in the manufacture of monoi. Coconut oil is distinguished from coconut oil obtained from non-dried almonds, which keeps the characteristic smell of coconut.
